I ran out of tortilla's last night and everyone wanted tacos with
fresh salsa ( I will share that recipe with you soon). So, what do you do? Panic! No, find a recipe and make them from scratch. It's not as difficult as you might think. Here are the ingredients:
4 cups flour
2 tsp salt
2 tsp baking powder
4 T lard (I substituted shortening)
1 1/2 cups water

Mix the dry ingredients first, and here is the critical part, work the
lard or shortening in by hand. You can just feel the authenticity. Roll the dough out 1/2 inch thick and divide into 24 equal pieces, I used an appropriate size cookie cutter to get the size and shape I wanted. It also helped to get the round finished shape you want. Next, roll them out on a floured surface and cook them individually in a medium to hot fry, lightly oiled fry pan.
Voila!! Your family will love helping with rolling and cooking the tortillas perhaps even working in tandem. It's a lot of fun and I think they taste better. Have fun with these and spice up your kitchen atmosphere with a little Latin Music. Dancing and cooking, trust me it works I have been doing it for years.
