

This recipe comes from the Pennsylvania-Dutch area of
of the United States. It is not the type of pie one sees
in the frozen section of the grocery store. Those are
meat pies. Pot pie is a thick, hearty stew with homemade
noodles. The noodles are often called slicks...when you
make them you will know why.
Now this isn't the healthiest meal on the planet, but it
is oh, so good on those cold winter nights and is a total
comfort food indulgence.
Following is my grandmother's recipe who came to America
from the Old Country.
Chicken Pot Pie
Boil 1 whole chicken in water with chopped up onion and
celery until the chicken is tender. Remove skin and bones
from the chicken and discard. Shred the chicken and return
to the boiling broth, turn down to a simmer.
Noodles (Slicks)
2/3 c shortening
2-1/2 c flour
1 or 2 eggs
1 T salt
1 T poultry seasoning
Mix together all ingredients until they form a soft dough. Add
a little ice water if the dough is too dry.
On a floured surface, roll the dough out thin and cut into squares
with a pastry or pizza cutter.
Add the noodles one at a time to the boiling broth.
*Do not add the noodles all at once, as they will clump together.
Cook until tender.
This stew was served in my family with fried chicken, green beans
and mashed potatoes.
