

Slice up 2 large leftover stuffed peppers and mix well
in a bowl.
Add 1 cup cooked rice.
Add 1 cup salsa.
Mix well.
Place in a greased 13x9 or 8x8 baking dish, according
to the amount of mixture you have.
Top with grated shredded sharp cheddar cheese.
Bake in a 350 degree oven 30 - 40 minutes or until
heated through and cheese is melted.
Serve with warmed tortilla and shredded lettuce.
