Devil Those Eggs

Working from home is Fantastic on a day like today. Ice storms and rolling power outages has played havoc with getting any meaningful work done in Toronto today. It is pretty to look at through the window as long as I don�t have to go out in it. As I did yesterday, I spent a total of 20 minutes prepping my affiliate offer. Couldn�t mail it today though. I do it in the morning. Doing my post now since the coffee shop (conveniently across the street from my flat).  The bird turned out well on Saturday (prepped as per my Best Baked Turkey post).

Today, I�m feeling comfort food. Deviled eggs. Yep, deviled eggs! I know what some of you are thinking; calories, my poor arteries. Fear not, I have a simple way to keep the flavor and avoid the chat with your cardiologist. Here we go�

Hard boiled eggs; cut in half lengthwise; scoop out and mash yokes in a bowl

1 spring onion; minced

1 small (about 2 inch) celery stock; minced

Honey mustard dressing (mix the following)

3 tbsp honey

3 tbsp mustard

� tsp black pepper

� tsp paprika

� tsp basil

Add the honey mustard dressing, onion, and celery to the yokes and mix well. Scoop back into each egg white half. Garnish with carrot sticks and sliced bell pepper (you choose the color). See?! No fattening mayo, no salt required. Cardiologist friendly as promised:)

As always, feel free to remove or sub anything you don�t like. Invite your cardiologist. Enjoy:)
